Saponification
The chemical reaction between fats or oils and lye that produces soap and glycerin.
Saponification is the chemical reaction that happens when a fat or oil is combined with a lye solution. The triglycerides in the oil break apart and recombine with the lye to form soap molecules and glycerin as a byproduct. This reaction is the basis of both cold process and hot process soap making, and it is already complete in melt and pour bases before you ever touch them.
The speed and completeness of saponification depend on temperature, the type of oils used, and how much the batter is stirred or blended. Harder oils like coconut or palm saponify differently than soft oils like olive, which is why recipes mix several oils rather than using just one. A fully saponified bar has no leftover free lye, only soap and the intentional superfat.
When formulating a recipe, always run it through a lye calculator rather than estimating, since even small errors in lye amount change how much saponification actually occurs. Common mistakes include weighing oils or lye on an inaccurate scale, substituting oils without recalculating the recipe, and pouring soap too soon and assuming the reaction is finished when it is only at trace.
